Chapter 2 · Legal & Administration

Licenses and Required Permits

The exact requirements vary by country, region, and even neighborhood, but the structure is usually similar: you need permission for the premises, permission to serve food safely, and permission to employ people and operate a business. The key is to start early and manage the process like a project with milestones.

Treat licensing as a timeline, not a checklist. Some permits depend on renovations, inspections, or proof of compliance. Build a schedule backwards from your opening day and add buffer time for delays.

Start by mapping requirements with your local authority or a specialized advisor. Then organize documents in a single folder (digital + physical), track submission dates, and schedule inspections early. Finally, avoid “last-minute surprises” by confirming which permits must be approved before you can legally open.
